Digestive Wellness (DW): Tell us a little bit about yourself, Tara.
Tara Gottlieb (TG): Originally from Long Island, I now live and work in New York City. Those who know me can vouch for the fact that planning is my passion. I am a planner not only as my career, but also as a way of life. I enjoy planning events for my friends, and of course for the next gluten free meal. I eat gluten free because I have to, certainly not because I want to. Thank goodness cheese is dairy because I love cheese "in the worst way" -- which is apparently a phrase I overuse. My mom likes to say I'm strong-minded, but I really just know what I want. Fun fact: my immediate family is made up of 75% Celiacs (sorry, Dad, you're the odd man out here).
DW: How did you find out you had Celiac disease?
TG: I initially had no symptoms. My brother was diagnosed first, and I was tested solely on the fact that the disease is genetic. Lo and behold, I was faced with making a drastic change to my diet for what seemed like no reason at all.
DW: When were you diagnosed?
TG: At age 16
DW: What has helped you manage your disease the best?
TG: I pride myself in being able to read and analyze a food label in less than 30 seconds.
DW: Foods you stay away from?
TG: I try to stay away from unidentified sauces and dressings. Gluten always seems to sneak up in them.
DW: Do you exercise? If so, what type(s)?
TG: I'll never get myself to go to the gym. I'm a big fan of those 30 minute DVDs I can do in my living room.
DW: What is your favorite food?
TG: Cheese (all types, except blue cheese)
DW: Favorite TV show?
TG: Grey's Anatomy
DW: Guilty pleasure?
TG: Can I say Grey's Anatomy again?
W: What is your favorite way to relieve stress?
TG: I organize things.
DW: And for our favorite question - what is the best advice you would give someone newly diagnosed with Celiac disease?
TG: Always ask before you eat.
